Wild rice or change starts with a small step

Change ... this word is on everybody's lips isn't it! We all want change ...quickly, we want the fairy to come with a magic wand and 1,2,3 and voila ... we are suddenly thinner, smarter, more educated, more flexible, fitter, better communicators, more erudite and so on.

I wonder how many people give up even before starting, too overwhelmed by their own grand project.

In my experience change starts with a tiny, tiny step .... with the willingness to do something differently, to introduce something new into your life.

Let's take a look at cooking for example ... cooking something new. Oh by the way, we are talking about cooking but the impact is way, way wider ... just like when you play billiards ... you hit one ball but 3 or 4 more are set in motion.........changing the dynamic everywhere ... :)

I've decided to challenge myself and introduce one new product into my diet, something that is related to the raw food or/and products I've never had before. No, not the ready made food thank you very much but something I need to cook from scratch and if possible where I can source my products from the nearby farm or from the shops like Holland and Barrett. I've started with the wild rice.

Much to my surprise I realised that this is not quite a grain but an aquatic grass seed with lots and lots of health benefits (gluten free, 30 times higher in antioxidants than the white rice, twice as much protein as brown rice, good for your bones, it's a good source of minerals and B vitamins, helps cholesterol levels). The fact that it is native to the Great Lakes region of North America made my imagination go wild and remember a book I loved as a teenager Winnetou by Karl May.

Is it easy to cook it you will ask me. Yep, very easy. Add one cup of rice (rinse it first) in 4 cups of water, bring it to boil and the first part of your cooking extravaganza is almost done. Time to prepare a cup of coffee, tea and read a few pages from your favourite magazine or book. It takes about 40 minutes for the rice to be ready and after that the options are quite endless. I will suggest today a salad ...(by the way the wild rice has a lovely nutty flavour) 

Carrot, Pecan and wild rice salad

Quantities
1 cup of wild rice
4 cups of water

1 boiled carrot and cut in small cubes (you can also use raw carrots and in this case please grate it)
1 handful of raisins
zest from one orange or lemon
juice of the orange or lemon
a pinch of salt and pepper
2 Tbsp of chopped parsley

1 Tbsp of chopped pecans

That's about it my darlings ... just mix all of them together and voila ... a nice side salad. You can eat it warm or cold .. it's up to you. Feel free to add different ingredients .. cranberries, sunflower seeds, pumpkin seeds (roast them for extra flavour)
